VVP: Quinoa Lentil Soup

November 15, 2013

Hello old and new friends! I’m excited to be a part of another season of the virtual vegan potluck happening today. I’m a part of the soup group this time around and I’m sharing this delicious quinoa lentil soup starring two of my favorite ingredients, quinoa (of course!) and lentils.

If you’re unfamiliar with the virtual vegan potluck, you’re in for a treat. Over 150 bloggers have teamed up to share their favorite vegan recipes. At the bottom of my post (below the recipe) you can choose to click forward or backward to view even more great recipes. All our blogs are linked so you can keep clicking forever or until you get hungry enough to make one of these delicious meals. Hope you enjoy.

This quinoa lentil soup is super hearty, I feel like it should almost be called a stew instead of a soup. It sticks to your ribs and the mild spiciness from the chipotle and cayenne keeps you warm. Perfect if you’re like me and are always cold in the winter months. Anyone else sleep with a heating pad on their feet and drink tea all day long?

No one?

There is something about the spices that also makes this soup feel homey and comforting. I added chipotle and turmeric, not two spices that you usually see together but they married perfectly. The mix of quinoa and lentils also makes for a thicker, more interesting soup.

Serve with a piece of crusty bread, if you’re into that sort of thing. Top with cilantro and hot sauce for more heat. I can also see this tasting delicious with a little bit of coconut milk added at the very end.

YUM. This soup looks so lovely, hearty, and tomato-y! I just made & posted a (less tomato-y) soup with lentils and farro recently. I’ll have to try your recipe with lentils+quinoa sometime soon, too!

Quinoa is such a great thickener and I will take a stewy soup like yours any day.

    • Reply Lisa November 19, 2013 at 7:39 pm

Quinoa is a great thickener, I actually prefer it to rice which can get too starchy.

  • Reply Maggie Muggins November 18, 2013 at 8:10 am

Now this looks like a soup that could keep you full for hours, super hearty and tasty looking!

    • Reply Lisa November 19, 2013 at 7:39 pm

Laura, you have to try it! It’s like adding rice but better!

  • Reply lizziefit November 18, 2013 at 7:06 pm

PERFECT! I bought quinoa and lentils for this salad that I used to looove but I ate myself sick of it. I haven’t been feeling very creative with either ingredients for a while so this is just what I need πŸ™‚

Sometimes you need a meal to warm you to your bones. Looks like I found a good one on to make on these chilly nights.

    • Reply Lisa November 19, 2013 at 7:41 pm

Yes, you do. This one will definitely heat you up.

  • Reply Nikki Spigner November 19, 2013 at 5:55 pm

Ok… I TOTALLY sleep with a heating pad at my feet… under my super lofty comforter… and drink tea… all…. day…. long… (which is getting expensive, since I’ve been hanging out in coffee shops, lately). Anyway, your soup looks wonderful!!!

    • Reply Lisa November 19, 2013 at 7:41 pm

Oh thank goodness I’m not the only one. πŸ™‚
