VVP: Quinoa Lentil Soup

Hello old and new friends! I’m excited to be a part of another season of the virtual vegan potluck happening today. I’m a part of the soup group this time around and I’m sharing this delicious quinoa lentil soup starring two of my favorite ingredients, quinoa (of course!) and lentils.

This quinoa lentil soup is super hearty, I feel like it should almost be called a stew instead of a soup. It sticks to your ribs and the mild spiciness from the chipotle and cayenne keeps you warm. Perfect if you’re like me and are always cold in the winter months. Anyone else sleep with a heating pad on their feet and drink tea all day long?

quinoa lentil soup (vegan, gluten-free)

There is something about the spices that also makes this soup feel homey and comforting. I added chipotle and turmeric, not two spices that you usually see together but they married perfectly. The mix of quinoa and lentils also makes for a thicker, more interesting soup.

Serve with a piece of crusty bread, if you’re into that sort of thing. Top with cilantro and hot sauce for more heat. I can also see this tasting delicious with a little bit of coconut milk added at the very end.

      Quinoa is a great thickener, I actually prefer it to rice which can get too starchy.

    PERFECT! I bought quinoa and lentils for this salad that I used to looove but I ate myself sick of it. I haven’t been feeling very creative with either ingredients for a while so this is just what I need 🙂

    Ok… I TOTALLY sleep with a heating pad at my feet… under my super lofty comforter… and drink tea… all…. day…. long… (which is getting expensive, since I’ve been hanging out in coffee shops, lately). Anyway, your soup looks wonderful!!!
